How easy is it to cut to size?

It is relatively easy. There are lots of cutting points marked on the back of the strips, you can use these as a guide to cut along with a hacksaw or Stanley knife. You can use the grooves that run the length of the spike to cut each strip in to three separate strips, this triples the length you can cover with each strip.
