Amaranthus caudatus or Love Lies Bleeding is an unusual and eye-catching annual that will bring an exotic feel to any seasonal display. Culinary note: The leaves are very nutritious and can be cooked like spinach or used as salad greens. The seeds can be treated as a gluten-free grain – Amaranthus flour is common.
